At an early age, food was never considered in philosophical thinking or scientific analysis (Morawski, 2008). For early peoples, food was a simple culinary practice, very different from authentic subjects such as science (Morawski, 2008). Food or taste were not considered important. However, as humanity changes, humans are reshaping how they define themselves. As a result, today, people define their identity more by the food they consume than by the social responsibilities of the past, as they did generations ago (Morawski, 2008). For centuries now, food refinement has continued to occur, which has inspired innovative researchers to engage in further food refinement, which has led to the development of food science and technology to measure and instrumental nature of food (Morawski, 2008 ). As the Food and Agriculture Organization (2004) states, as the world evolves, there is a significant elimination of infectious diseases and a decrease in malnutrition. It is estimated that the rate of malnutrition has decreased by 50% since the 1950s. Currently, malnutrition is estimated to occupy 10% as pockets of malnutrition still exist in the community, particularly...... middle of paper ......id=29Hufmann, GF, Kanikireddy, and Patel (2010).
